  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano

  • 1 red onion, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • Wooden skewers (soaked in water)

  2. Add chicken chunks to the marinade; coat well. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
  3. Thread marinated chicken alternately with pieces of onion and bell peppers onto soaked skewers.
  4. Preheat grill or grill pan over medium-high heat.
  5. Grill skewers for about 10-15 minutes, turning occasionally until chicken is cooked through with grill marks.
