  • 1 cup panko breadcrumbs

  • Oil for frying
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tbsp sriracha sauce
  • 2 cups cooked rice
  • 1 cup shredded lettuce
  • ½ cup sliced cucumbers
  • ½ cup shredded carrots

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Dredge each piece in flour, ensuring an even coat.
  3. Dip floured chicken into beaten eggs and coat thoroughly with panko breadcrumbs.
  4. Heat oil in a frying pan over medium heat.
  5. Fry chicken pieces until golden brown and cooked through, about 4–6 minutes per batch.
  6. Drain on paper towels if desired to remove excess oil.
