  • 1 tablespoon vegetable oil
  • 1 large onion (chopped)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon chili flakes (optional)
  • Coconut milk (to cover beef)

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic and grated ginger; cook for another minute.
  2. Increase heat slightly and add cubed beef chuck. Brown on all sides (approximately 8–10 minutes), being careful not to overcrowd the pot.
  3. Sprinkle in curry powder, ground cumin, turmeric, and optional chili flakes. Stir well to coat the beef evenly; cook for about 2 minutes.
  4. Pour in enough coconut milk to cover the beef along with broth or water as needed. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 1.5 hours until the meat is tender.
  5. Taste and adjust seasoning if necessary before serving hot with steamed rice, crispy fries, or garlic naan.
