  • 2 cups bread flour
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil
  • 1/2 tsp squid ink
  • 1 cup warm water
  • 4 oz button mushrooms
  • 1/2 cup shallots (or red onion)
  • 45 cloves garlic
  • 2 Tbsp cooking apple juice
  • 1 cup jarred pesto sauce
  • Green Pesto Gouda cheese

Instructions

  1. In a mixing bowl, combine bread flour, garlic powder, salt, and yeast. Create a well in the center and add olive oil and squid ink.
  2. Gradually mix in warm water until a dough forms. Knead for about 5 minutes until smooth. Grease the bowl with olive oil and let rise for one hour.
  3. Preheat your oven to 375°F (190°C). Sauté shallots in butter until soft, add garlic, then mushrooms, seasoning with salt, pepper, apple juice, and thyme.
  4. Punch down risen dough and divide into four portions; roll each into flat rounds.
  5. Spread pesto on each round; top with mushroom mixture and cheese. Bake for 15-20 minutes until golden brown.
  6. For glaze, reduce balsamic vinegar with honey in a saucepan; drizzle over baked flatbreads before serving.
