  • 2 â…” cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • ¼ tsp fine sea salt
  • 23 tbsp Turbinado sugar (optional)

Instructions

  1. Prepare the crust by browning cold unsalted butter in a saucepan until golden brown. Let it cool slightly.
  2. Combine all-purpose flour and fine sea salt in a mixing bowl; add the cooled browned butter.
  3. Gradually mix in cold water and apple cider vinegar until dough forms. Divide into two disks and refrigerate for at least one hour.
  4. For the filling, mix sliced peaches and quartered strawberries with granulated sugar, cornstarch, lemon juice, lemon zest, and salt until well-coated.
  5. Preheat oven to 375°F (190°C). Roll out one disk of dough and place in a pie dish. Fill with fruit mixture and cover with the second dough disk.
  6. Bake for about 70 minutes until the crust is golden brown and filling is bubbly. Cool before serving.
