1.5 lbs boneless, skinless chicken breasts
12 oz penne pasta
3 tbsp olive oil
4 cloves garlic, minced
2 cups whole milk
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tbsp Cajun seasoning
1 tsp garlic powder
1 tsp smoked paprika
Salt and black pepper, to taste
3 tbsp unsalted butter
2 tbsp all-purpose flour
2 oz cream cheese, softened
Instructions
Cook the penne pasta in salted boiling water until al dente, then drain, reserving some pasta water.
Toss chicken pieces in olive oil, Cajun seasoning, garlic powder, smoked paprika, salt, and pepper until well-coated.
In a skillet over medium-high heat, sear the seasoned chicken for about 6-8 minutes until golden brown; keep warm.
In the same skillet, melt butter and sauté garlic before whisking in flour to form a roux. Gradually add milk and cream while whisking until smooth; simmer until thickened.
Stir in cream cheese, mozzarella, and Parmesan until melted; season with salt and pepper.
Combine cooked penne and chicken into the sauce; warm together for a few minutes before serving.
