- 12 oz penne pasta
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 2 cups whole milk
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- 3 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 oz cream cheese, softened
- Cook the penne pasta in salted boiling water until al dente, then drain, reserving some pasta water.
- Toss chicken pieces in olive oil, Cajun seasoning, garlic powder, smoked paprika, salt, and pepper until well-coated.
- In a skillet over medium-high heat, sear the seasoned chicken for about 6-8 minutes until golden brown; keep warm.
- In the same skillet, melt butter and sauté garlic before whisking in flour to form a roux. Gradually add milk and cream while whisking until smooth; simmer until thickened.
- Stir in cream cheese, mozzarella, and Parmesan until melted; season with salt and pepper.
- Combine cooked penne and chicken into the sauce; warm together for a few minutes before serving.
