  • 2 1/2 cups All-Purpose Flour
  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon for the filling; set aside.
  3. In a large bowl, combine all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt; set aside.
  4. Cream cold butter and granulated sugar in a stand mixer until smooth.
  5. Add eggs and vanilla to the mixture until fully combined.
  6. Gradually mix in dry ingredients until incorporated.
  7. Shape dough into a rectangle; spread the cinnamon filling evenly across it.
  8. Roll up the dough and cut it into equal pieces.
  9. Bake cookies on prepared sheets for 9–11 minutes until edges are golden.
  10. Prepare frosting by mixing cream cheese, butter, powdered sugar, vanilla extract, and salt until smooth.
  11. Frost cooled cookies generously.
