Instructions

  1. Preheat your oven to 350ºF.
  2. In a bowl, mix flour, baking powder, cinnamon, cloves, ginger, and salt; set aside.
  3. In another bowl, cream together the softened butter, brown sugar, and white sugar until fluffy.
  4. Add pumpkin puree, egg, and vanilla extract to the creamed mixture; beat until well combined.
  5. Gradually stir in the dry ingredients until just mixed.
  6. Scoop dough balls (about 1 ½ tablespoons) onto a parchment-lined baking sheet; flatten slightly.
  7. Bake for 10–12 minutes until set; remove from oven and cool on a wire rack.
