  • 1 tablespoon olive oil
  • 1 lb beef sirloin, thinly sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • ½ cup shredded provolone cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add thinly sliced beef sirloin and cook until browned (about 5 minutes). Remove from skillet and set aside.
  3. In the same skillet, sauté sliced green bell pepper, onion, and minced garlic until softened (5-7 minutes). Remove from heat.
  4. For the sauce, melt butter in a saucepan over medium heat. Whisk in flour to form a roux, then gradually add whole milk while whisking until thickened (3-4 minutes). Stir in provolone and Parmesan cheeses until melted; season with salt and pepper.
  5. Combine cooked tortellini, beef, and vegetables with the cheese sauce; stir gently to coat evenly. Serve hot.
