  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz cream cheese
  • 1 cup Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium-high heat, sear seasoned chicken in olive oil and butter until golden brown and cooked through; remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic. Add cream, milk, and cream cheese; whisk until smooth. Stir in Velveeta until melted, then add mozzarella and Parmesan.
  4. Combine the cooked pasta with the sauce until evenly coated.
  5. Serve the pasta topped with seared chicken, extra sauce drizzled on top, and garnish with fresh parsley.
