  • 2 large chicken breasts
  • 300g penne pasta
  • 500g baby potatoes
  • 200ml heavy cream
  • 50g grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tsp dried oregano
  • Juice of lemon
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 2 tbsp chopped parsley
  • 1 tsp Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Marinate the chicken with olive oil, lemon juice, paprika, garlic powder, oregano, salt, and pepper for 15 minutes.
  2. Preheat the oven to 200C (400F). Toss halved baby potatoes with olive oil and seasonings; roast on a baking sheet for 25-30 minutes until crispy.
  3. Cook penne pasta in salted boiling water until al dente; drain.
  4. In a skillet, melt butter over medium heat; sauté minced garlic and add heavy cream and Parmesan cheese to create the sauce.
  5. Toss cooked pasta in the sauce with chopped parsley.
  6. Grill marinated chicken for about 5-6 minutes on each side until cooked through.
  7. Serve pasta topped with sliced grilled chicken and roasted potatoes on the side.
