  • 12 oz twisted pasta (rotini or fusilli)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook twisted pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a mixing bowl, coat chicken pieces with Cajun seasoning and garlic powder.
  3. Heat butter and olive oil in a skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden-brown and cooked through; transfer to a plate.
  4. In the same skillet, sauté minced garlic for about 1 minute, then stir in heavy cream and milk. Simmer for 2-3 minutes.
  5. Add Velveeta cubes, stirring until melted, followed by mozzarella and Parmesan until the sauce is thick and creamy.
  6. Season sauce with salt and pepper, then toss in cooked pasta until well coated.
  7. Serve with chicken arranged alongside creamy pasta, garnished with parsley if desired.
