  • 4 boneless, skinless chicken breasts
  • 2 cups cooked white rice
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 3 tablespoons peri-peri sauce
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 1 tsp lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 3-4 minutes per side until golden brown. Remove from skillet.
  3. In the same skillet, sauté chopped onion and minced garlic until fragrant.
  4. Add chicken stock and scrape up browned bits from the pan. Stir in heavy cream, peri-peri sauce, and lemon juice; simmer until slightly thickened.
  5. Return the chicken to the skillet; simmer until fully cooked (165°F/74°C).
  6. Serve over cooked rice and garnish with fresh parsley.
