  • 2 lbs fresh tomatoes (Roma or vine-ripened), halved
  • 1 whole head of garlic
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 2 cups vegetable or chicken broth
  • ½ cup heavy cream (or coconut milk)
  • ¼ cup fresh basil leaves
  • Salt and black pepper to taste
  • Optional: ½ tsp red pepper flakes for heat

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange halved tomatoes on the sheet, drizzle with 1 tbsp olive oil, and season with salt and pepper. Cut the top off the garlic head, drizzle with another tbsp olive oil, wrap in foil, and place alongside the tomatoes.
  3. Roast for 30-35 minutes until caramelized. Allow to cool slightly.
  4. In a large pot over medium heat, sauté chopped onions in 1 tbsp olive oil for about 5 minutes until soft.
  5. Squeeze roasted garlic into the pot along with roasted tomatoes and any juices. Pour in broth and add basil leaves.
  6. Blend until smooth using an immersion blender or standard blender in batches.
  7. Stir in heavy cream (or coconut milk) and simmer for an additional 5-10 minutes to meld flavors. Adjust seasoning as needed.
  8. Serve warm garnished with fresh basil leaves or a drizzle of cream.
