  • 8 oz pasta (penne, spaghetti, or linguine)
  • 1 cup finely chopped onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1 cup chicken broth
  • Fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat. Season the chicken with salt and pepper; cook until golden brown (5-7 minutes). Set aside.
  2. In the same pot, add chopped bacon alternatives and cook until crispy (3-4 minutes).
  3. Sauté onion in the pot until translucent (3 minutes), then add garlic and sauté for another minute.
  4. Return chicken to the pot; pour in chicken broth and scrape up browned bits.
  5. Add pasta with enough water to cover; cook according to package instructions (8-10 minutes) until al dente.
  6. Stir in fresh spinach until wilted; adjust seasoning if needed before serving.
