  • 1 tablespoon olive oil or 1/4 cup water
  • 1 large white onion, sliced
  • 6 cloves garlic, minced
  • 2 1/2 lbs fresh tomatoes (roma or plum)
  • 1/2 cup fresh basil leaves (or 2 teaspoons dried)
  • 1/2 teaspoon dried oregano
  • 2 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Vegan cream for serving

Instructions

  1. Prep your ingredients by slicing the onion and mincing the garlic. Cut tomatoes into quarters.
  2. In a heavy-bottomed pan, heat olive oil or water over medium heat. Sauté sliced onion for about 7 minutes until soft. Add minced garlic and cook for an additional minute.
  3. Stir in quartered tomatoes, basil leaves (or dried), oregano, salt, pepper, and vegetable broth.
  4. Bring to a boil, then cover, reduce heat, and simmer for about 15 minutes.
  5. Allow the soup to cool slightly before blending until creamy using an immersion blender or countertop blender.
  6. Taste and adjust seasoning as needed.
  7. Serve hot with a drizzle of vegan cream on top.
