  • 2 sheets of puff pastry (thawed)
  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (seeds scraped) or 2 tsp vanilla bean paste
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 400°F (200°C). Line two baking trays with parchment paper.
  2. Roll out the puff pastry slightly and prick all over with a fork. Place on trays and cover with another sheet of parchment and a second tray on top.
  3. Bake for 35-45 minutes until golden brown. Let cool completely.
  4. Trim edges of baked pastry to fit an 8×8-inch square pan.
  5. In a medium saucepan, whisk together sugar, cornstarch, and salt. Add egg yolks and mix well.
  6. Warm milk in another saucepan until steaming but not boiling.
  7. Gradually incorporate warm milk into the egg mixture while whisking continuously.
  8. Return the mixture to the saucepan and cook over medium heat until thickened (about 5-7 minutes).
  9. Stir in vanilla seeds and cold butter until fully melted and combined.
  10. Line the square pan with foil, place one piece of puff pastry at the bottom, pour custard over it evenly, then add another layer of puff pastry on top.
  11. Cover tightly and refrigerate for at least four hours or overnight before slicing.
