  • 4 small to medium chicken breasts (or 2 large halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 cup light cream (or plant-based cream substitute)
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup grated parmesan cheese
  • 1 cup chopped spinach (optional)

Instructions

  1. Season the chicken with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side until golden brown. Remove from skillet and set aside.
  3. Lower the heat and add minced garlic to the pan, sautéing for about 30 seconds. Pour in the cream while stirring continuously.
  4. Add Italian seasoning and parmesan cheese, mixing until smooth. Stir in chopped spinach if using and simmer for 2-3 minutes.
  5. Return the cooked chicken to the pan, spooning sauce over the top, then simmer for an additional minute before serving hot.
