  • 1 grilled chicken breast
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or paprika
  • Salt & pepper, to taste
  • 1 cup arugula or mixed greens
  • 1 avocado, sliced
  • 56 cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1 cup crumbled feta cheese or substitute
  • 1 cup garlic croutons
  • 1 tbsp olive oil (for dressing)
  • 1 tsp lemon juice or balsamic vinegar
  • Salt & pepper, to taste (for dressing)

Instructions

  1. Grill the chicken breast after seasoning it with olive oil, garlic powder, Italian seasoning, salt, and pepper for about 5-6 minutes on each side until fully cooked. Let it rest before slicing.
  2. In a mixing bowl, layer arugula or mixed greens, halved cherry tomatoes, diced cucumber, crumbled feta cheese, and garlic croutons. Top with sliced avocado and grilled chicken.
