  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • 1/2 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp finely chopped red onion
  • Fresh cilantro, optional
  • Pinch of salt

Instructions

  1. Season chicken breasts with olive oil, smoked paprika, garlic powder, salt, and pepper.
  2. Grill or pan-fry chicken for 5-6 minutes on each side until cooked through (165°F internal temperature). Let rest before slicing.
  3. Toss sweet potato fries with olive oil, paprika, chili powder (optional), and salt; spread on a baking sheet.
  4. Bake at 425°F for 20-25 minutes, flipping halfway until golden brown.
  5. Mash avocado with lime juice, chopped cilantro, and salt to make guacamole.
  6. Combine diced avocado, halved cherry tomatoes, red onion, lime juice, cilantro (if desired), and salt for tomato-avocado salsa.
  7. Assemble by layering sweet potato fries at the bottom of a bowl topped with sliced grilled chicken, guacamole, and salsa.
