  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 bell peppers (red, yellow, or green), sliced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder (optional)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ cup low-sodium chicken broth
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce or coconut aminos
  • Juice of ½ lime (optional)
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onions to the skillet. Sauté until soft and translucent, about 3 minutes.
  3. Stir in minced garlic. Cook for another 30 seconds until fragrant.
  4. Add ground turkey to the skillet. Break it up with a wooden spoon. Cook until no longer pink, about 5–6 minutes.
  5. Season with smoked paprika, cumin, chili powder (if using), salt, and black pepper. Stir to coat the turkey evenly.
  6. Add sliced bell peppers. Cook for about 3–4 minutes until they soften slightly but retain some crunch.
  7. Pour in the chicken broth, tomato paste, and soy sauce. Stir well; let simmer for about 2–3 minutes for flavors to meld.
  8. Turn off the heat. Squeeze in lime juice if desired.
  9. Garnish with chopped cilantro or parsley. Serve hot on its own or with rice or tortillas.
