  • 12 tablespoons very cold unsalted butter, diced into cubes
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour, plus more for rolling out scones
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend (for glaze)
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream (for glaze)
  • 1 tablespoon maple syrup (for glaze)
  • pinch of kosher salt (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine flour, sugar, baking powder, chai spice blend, and salt; pulse until mixed.
  3. Add cold butter and pulse until small butter pieces remain.
  4. Mix the heavy cream, one egg, and egg yolk together; gradually pulse into the dry mixture until combined.
  5. Transfer dough to a floured surface, shape into a disc, wrap in plastic wrap, and freeze for about 30 minutes.
  6. Roll out the chilled dough to your desired thickness and cut into shapes.
  7. Brush with reserved egg white and bake for 20–22 minutes until golden brown.
  8. For the glaze, whisk powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until thickened.
  9. Glaze baked scones after they cool slightly.
