  • 4 cups vegetable broth

  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup milk (or non-dairy alternative)
  • 4 tbsp butter (or plant-based substitute)
  • 4 large potatoes, peeled and chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, sliced carrots, and celery; cook until soft.
  2. Stir in minced garlic for about one minute until fragrant.
  3. Add lentils, diced tomatoes, vegetable broth, thyme, and bay leaf; mix well.
