  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 6 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups dry apple vinegar
  • 2 cups beef stock
  • 2 bay leaves
  • 2 sprigs rosemary
  • 3 sprigs thyme
  • Salt and black pepper to taste

Instructions

  1. Prepare all ingredients by dicing the onion, chopping the carrots and celery, and mincing the garlic.
  2. In a Dutch oven over medium-high heat, heat olive oil. Season lamb shanks with salt and pepper, then sear them until browned on all sides (about 4-5 minutes per side) before removing them from the pot.
  3. In the same pot, sauté onions, carrots, celery, and garlic until softened (about 5-7 minutes). Stir in tomato paste until well combined.
  4. Pour in apple vinegar and beef stock; add bay leaves, rosemary, and thyme. Return lamb shanks to the pot so they are submerged in liquid.
  5. Cover with a lid and let simmer on low heat for about 2-3 hours until meat is tender.
