  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a mixing bowl, combine onions, bell peppers, cherry tomatoes, garlic, olives, olive oil, oregano, salt, and pepper; mix well.
  3. Spread the vegetable mixture in the baking dish and place fish fillets on top. Drizzle with lemon juice and sprinkle with lemon zest.
  4. Bake uncovered for about 20–25 minutes until the fish is opaque and flakes easily with a fork.
  5. Garnish with fresh parsley and serve with lemon wedges.
