  • ½ red chili pepper
  • 2 cloves garlic
  • 1 onion
  • A handful of fresh cilantro
  • 1 can Piquillo peppers or roasted red peppers (10 oz)
  • 2 cans chopped tomatoes (14 oz each)
  • 1 tsp ground cumin
  • ½ cup coconut milk
  • Sea salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the chopped red chili pepper, minced garlic, and chopped onion; sauté for about two minutes until fragrant.
  2. Stir in the Piquillo peppers (or roasted red peppers), chopped tomatoes, ground cumin, coconut milk, sea salt, and black pepper. Cook for approximately 10 to 15 minutes, adding water or more coconut milk if needed for desired consistency.
  3. Carefully blend the soup until smooth using a blender. Return it to the pot if necessary and serve hot with lime wedges, tortilla chips, and your choice of chopped veggies.
