  • 1 1/4 cups light brown sugar (packed)
  • 1 tablespoon pure vanilla extract
  • 2 large eggs (room temperature)
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 12 ounces milk chocolate (melted)
  • 3 tablespoons cinnamon sugar

Instructions

  1. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the vanilla extract and mix well. Incorporate the eggs one at a time.
  2. Gradually add in the flour, baking soda, cinnamon, ginger, nutmeg, and salt until the dough forms.
  3. Divide the dough into two halves, roll each half to about 1/4 inch thick on a floured surface, and cut out pumpkin shapes using a cookie cutter.
  4. Cut out eyes and mouths on half of the cookies. Freeze for approximately 15–20 minutes until firm.
  5. Preheat your oven to 350°F (175°C). Bake for 8–12 minutes until lightly golden brown. Cool on wire racks.
  6. Brush melted milk chocolate onto half of the cookies without faces; top with the decorated cookie halves and sprinkle with cinnamon sugar.
