  • 1½ cups graham cracker crumbs
  • 2½ tbsp sugar
  • ⅓ cup melted butter
  • 8 oz cream cheese
  • 1 egg
  • ¼ cup sugar
  • ½ tsp vanilla extract
  • 7.5 oz pumpkin puree
  • ½ cup evaporated milk
  • ⅛ cup brown sugar
  • ½ tsp cinnamon
  • ⅛ tsp nutmeg
  • ⅛ tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin pan with cupcake liners and lightly spray with nonstick cooking spray.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press one tablespoon into each muffin liner to form the crust.
  3. In another bowl, beat cream cheese and sugar until smooth. Add egg, vanilla, pumpkin puree, evaporated milk, brown sugar, cinnamon, nutmeg, and salt; mix until fully combined.
  4. Pour filling evenly over crusts in muffin cups.
  5. Bake for approximately 55 minutes or until the centers are set. Cool completely before refrigerating for at least two hours.
