  • 1.5 pounds Shrimp (peeled and deveined)
  • 4 cups Chicken Broth
  • 1 medium Yellow Onion (diced)
  • 4 cloves Garlic (minced)
  • 1 cup Parmesan Cheese (grated, plus extra for serving)
  • ½ cup Heavy Cream
  • 2 tablespoons Olive Oil
  • 1 Lemon (juiced and zested)
  • ¼ cup Fresh Parsley (chopped)
  • ¼ teaspoon Red Pepper Flakes (optional)
  • Salt and Black Pepper (to taste)

Instructions

  1. In a large oven-safe skillet over medium heat, combine olive oil and butter. Add diced onion and sauté until softened.
  2. Stir in minced garlic and optional red pepper flakes; cook until fragrant.
  3. Add orzo pasta, toasting for 1-2 minutes. If using white apple vinegar, add it now.
  4. Pour in chicken broth along with lemon zest, salt, and pepper. Bring to a boil, then reduce heat and simmer until most liquid is absorbed.
  5. Gently stir in shrimp; cover and cook until shrimp are pink and cooked through.
  6. Remove from heat; stir in grated Parmesan cheese and heavy cream until smooth.
  7. Finish with lemon juice and chopped parsley before serving hot.
