  • 1 ½ pounds boneless, skinless chicken breasts (cubed)
  • 8 ounces dry orzo
  • 2 cups chopped fresh asparagus
  • ½ cup diced yellow onion
  • 2 ½ cups low sodium chicken broth
  • ⅓ cup half-and-half (or milk)
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 tablespoon minced garlic
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 2 sprigs fresh thyme (can sub 1/4 teaspoon dried thyme)
  • ⅓ cup freshly grated parmesan
  • Chopped fresh parsley for garnish

Instructions

  1. In a bowl, season cubed chicken with garlic powder, salt, black pepper, and red pepper flakes.
  2. Heat olive oil in a large high-sided pan over medium-high heat. Cook seasoned chicken until browned (about 10–12 minutes). Remove and set aside.
  3. In the same pan, sauté diced onion until softened (about 3 minutes), then add dry orzo and minced garlic; toast for about 3 minutes.
  4. Pour in chicken broth and bring to a simmer. Cover and cook for about 7 minutes or until liquid is mostly absorbed.
  5. Stir in cooked chicken, asparagus, half-and-half, spinach, and thyme until warmed through.
  6. Serve immediately topped with parsley and extra parmesan.
