  • 4 boneless, skinless chicken breasts
  • 1/2 cup Dijon mustard
  • 1/2 cup honey
  • 1/4 cup mayonnaise
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced
  • 1 tablespoon olive oil
  • 4 slices cooked Turkey Bacon, chopped into 2-inch pieces
  • 2 cups shredded Colby Jack cheese
  • 2 tablespoons fresh parsley, for garnish (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a bowl, mix Dijon mustard, honey, mayonnaise, and lemon juice. Reserve ¼ cup for later.
  2. Marinate chicken in the remaining mixture for at least 30 minutes or overnight.
  3. Preheat the oven to 400°F.
  4. Sauté sliced mushrooms in butter until golden; set aside.
  5. Cook marinated chicken in a skillet until browned on both sides.
  6. Top each piece with sautéed mushrooms, turkey bacon, and cheese.
  7. Bake covered for about 10–15 minutes until cooked through (165°F).
