- 4 boneless, skinless chicken breasts
- 1/2 cup Dijon mustard
- 1/2 cup honey
- 1/4 cup mayonnaise
- 1 teaspoon fresh lemon juice
- 2 tablespoons butter
- 8 ounces mushrooms, sliced
- 1 tablespoon olive oil
- 4 slices cooked Turkey Bacon, chopped into 2-inch pieces
- 2 cups shredded Colby Jack cheese
- 2 tablespoons fresh parsley, for garnish (optional)
- Salt and freshly ground black pepper to taste
- In a bowl, mix Dijon mustard, honey, mayonnaise, and lemon juice. Reserve ¼ cup for later.
- Marinate chicken in the remaining mixture for at least 30 minutes or overnight.
- Preheat the oven to 400°F.
- Sauté sliced mushrooms in butter until golden; set aside.
- Cook marinated chicken in a skillet until browned on both sides.
- Top each piece with sautéed mushrooms, turkey bacon, and cheese.
