  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1 stick (113 grams) unsalted butter (at cool room temperature)
  • 1/4 cup (50 grams) packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon fine sea salt
  • 1 1/2 cups (188 grams) powdered sugar (sifted)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk (plus more if needed)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking pan.
  2. In a mixing bowl, beat together softened unsalted butter and light brown sugar until creamy. Add egg and vanilla extract; mix well. Stir in pumpkin puree until combined.
  3. In another bowl, whisk together flour, cinnamon, ginger, nutmeg, baking soda, and sea salt. Gradually add the dry mixture to the wet ingredients until just combined.
  4. Pour the batter into the prepared pan and smooth it evenly. Bake for approximately 25 minutes or until a toothpick inserted comes out clean.
  5. While cooling, prepare frosting by beating together unsalted butter and light brown sugar until fluffy. Mix in cinnamon and salt before gradually adding sifted powdered sugar and milk until smooth.
  6. Once cooled completely, frost the bars evenly and cut them into squares.
