  • 1/3 cup white chocolate chips
  • Granulated sugar for rolling

Instructions

  1. In a skillet over medium heat, melt the butter and combine it with cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice. Stir until thickened.
  2. Add graham cracker crumbs and white chocolate chips; mix until smooth and melted. If desired, add food coloring for vibrancy.
  3. Pour the mixture onto a greased baking sheet and refrigerate until firm (about 2 hours).
  4. Once chilled, roll into small balls using buttered hands.
  5. Roll each truffle in granulated sugar for coating.
