  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)

  • 200 grams wheat flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175°C (347°F) and grease a springform pan.
  2. In a mixing bowl, whisk eggs and brown sugar until frothy, then add coconut oil, pumpkin puree, and vanilla extract.
  3. In another bowl, combine flour, baking powder, and pumpkin spice. Gradually fold into the wet ingredients until just mixed.
  4. Pour batter into the prepared pan and bake for 25 minutes uncovered. Cover loosely with foil and bake for an additional 20 minutes until done.
  5. Allow to cool completely before glazing with a mixture of powdered sugar, milk, and maple syrup.
