  • 2 cups granulated sugar
  • 6 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 tbsp distilled white vinegar
  • 2 cups cake flour, sifted
  • 1 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk, room temperature
  • 1 oz red food coloring, liquid or gel
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 23 tbsp milk

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a 12-cup bundt or tube pan by greasing and flouring it.
  2. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy (about 5–6 minutes).
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and vinegar.
  4. In another bowl, sift together cake flour, cocoa powder, baking soda, and salt.
  5. Mix buttermilk with red food coloring in a separate bowl.
  6. Gradually add dry ingredients to the creamed mixture alternately with the colored buttermilk until just combined.
  7. Pour batter into the prepared pan and gently tap to remove air bubbles.
  8. Bake for 75–85 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow cooling in the pan for 15 minutes before transferring to a wire rack.
