  • 12 button or cremini mushrooms
  • 7 slices turkey bacon
  • 1/4 cup diced onion
  • 8 ounces cream cheese (room temperature)
  • 1/21 cup shredded sharp cheddar cheese
  • Black pepper (to taste)
  • 1/2 teaspoon garlic powder
  • 23 tablespoons butter or reserved turkey bacon drippings
  • 1/2 cup bread crumbs

Instructions

  1. Preheat the oven to 350°F. Clean the mushrooms and remove their stems; finely chop the stems.
  2. Cook 3 slices of turkey bacon until limp and the remaining 4 until crispy. Reserve drippings and place all turkey bacon on a paper towel-lined plate.
  3. Sauté chopped onion and mushroom stems in reserved drippings until soft. Chop crispy turkey bacon into small pieces.
  4. In a mixing bowl, combine cream cheese, chopped turkey bacon cheddar cheese, sautéed vegetables, black pepper, and garlic powder.
  5. Spray a baking dish with cooking spray and fill each mushroom cap with the mixture.
  6. Top with remaining turkey bacon pieces cut into small bits and sprinkle bread crumbs over each mushroom.
  7. Drizzle with melted butter or reserved drippings and bake for about 20 minutes until golden brown.
