A flavorful and balanced bowl packed with spicy grilled chicken, fluffy rice, and a refreshing avocado-cucumber salad. This dish blends heat, crunch, and creaminess for a satisfying and wholesome meal that’s perfect for lunch or dinner.
Marinate the Chicken: In a bowl, combine olive oil, soy sauce, sriracha, garlic powder, smoked paprika, salt, and pepper. Add the chicken and coat evenly. Let marinate for at least 10 minutes (or up to 1 hour for more flavor).
Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook the chicken for 6–7 minutes per side or until fully cooked and nicely charred. Remove from heat, let rest for a few minutes, then slice into strips.
Prepare the Rice: While the chicken cooks, prepare or reheat your rice and set aside.
Make the Salad: In a bowl, combine diced avocado, cucumber, lime juice, cilantro (if using), and a pinch of salt and pepper. Gently toss to combine.
