  • 8 mini or Persian cucumbers
  • 1 green onion (finely sliced)
  • Sesame seeds
  • 1 ½ tbsp low-sodium soy sauce (or tamari/coconut aminos)
  • 1 ½ tbsp rice vinegar (or white apple vinegar)
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves (minced)
  • 1 tsp crushed red chili flakes

Instructions

  1. Wash the cucumbers and trim the ends. For accordion-style cuts, place each cucumber between chopsticks and slice diagonally at a 45° angle without cutting through. Turn the cucumber and slice at a 90° angle for spirals. Alternatively, thinly slice using a mandolin.
  2. In a small bowl, whisk together soy sauce, vinegar, sesame oil, honey, minced garlic, and chili flakes until well combined. Adjust seasoning to taste.
  3. In a large mixing bowl, combine the cucumbers with the dressing and gently toss to coat. Garnish with sliced green onions and sesame seeds before serving.
