  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 tablespoon parsley flakes
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 ounces sliced provolone cheese
  • 2.25 ounces canned sliced black olives
  • 16 ounces dried spaghetti
  • 16 ounces marinara

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground beef, breadcrumbs, eggs, olive oil, parsley flakes, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Shape the mixture into 2-inch meatballs and place them on the prepared baking sheet.
  4. Bake for 18-20 minutes until golden brown and cooked through.
  5. Cut provolone into circles and place one on each meatball; top with an olive slice to create ‘eyeballs.’
  6. Return the meatballs to the oven for another 2-3 minutes until cheese melts.
  7. Cook spaghetti according to package instructions; heat marinara sauce in a separate pot.
  8. Combine cooked spaghetti with marinara sauce; serve topped with eyeball meatballs.
