  • 8 oz mascarpone cheese
  • 2 tablespoons strong espresso
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 10 oz white chocolate (for coating)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. Pulse 18–20 crisp ladyfingers in a food processor until finely crushed.
  2. In a mixing bowl, combine 8 oz mascarpone cheese, 2 tablespoons strong espresso, 1/3 cup powdered sugar, and 1/2 teaspoon vanilla extract; mix until smooth.
  3. Fold the crushed ladyfingers into the mascarpone mixture until you achieve a moldable dough.
  4. Chill the mixture in the refrigerator for 15–20 minutes.
  5. Roll chilled dough into 1-inch balls and place them on a parchment-lined tray.
  6. Refrigerate again for 30 minutes until firm.
  7. Melt 10 oz white chocolate using a double boiler or microwave.
  8. Dip each truffle into the melted chocolate, allowing excess to drip off before returning them to the tray.
  9. Dust with cocoa powder while still tacky and chill again until set.
