  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion, diced
  • 3 large carrots, cut into chunks
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 9 oz vegan beef or portobello mushrooms (optional)
  • 1 medium rutabaga, cut into chunks
  • 4 large potatoes, cut into chunks
  • ¼ head green cabbage, shredded
  • 4 cups vegetable stock
  • ¼ cup soy sauce or Tamari
  • Fresh herbs: thyme and rosemary

Instructions

  1. In a large Dutch oven over high heat, add oil. Once hot, sear vegan beef or mushrooms until golden; set aside.
  2. Lower heat to medium and sauté onions, carrots, and celery in the same pot until softened.
  3. Add minced garlic and cook briefly before incorporating flour.
  4. Gradually pour in vegetable stock while stirring to combine and remove lumps.
  5. Stir in rutabaga, potatoes, cabbage, soy sauce, salt, pepper, and herbs; mix well.
  6. Bring to a boil then reduce heat to medium-low and let simmer uncovered for 45-50 minutes until veggies are tender.
  7. Return seared vegan beef or mushrooms to the pot 10 minutes before serving.
